Homemade Oreos.

The other day I got a real hankering for some good home cooking/baking, which is a real shame because Blake has sworn off cooking of late. It's hard to want to cook when Seamless just makes it so darn easy to order in. And we don't have a dishwasher, so that's something...

In any case, we whipped up these bad boys, and they rocked our world that night. Then I brought them to work the next morning to share with colleagues, because it's just indecent for something like that to go unshared. Also, I could definitely let these rock my world all week long. Nothing good can come of that.

Here's what you need: 
(wafers)
1 1/4 c. flour
1/2 c. unsweetened cocoa
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1/2 c. + 2 tbsp. unsalted butter, room temp
1 large egg

(filling)
1/4 c. unsalted butter, room temp
1/4 c. vegetable shortening
2 c. confectioners' sugar
2 tsp. vanilla extract
